Two Awesome, Plant-Based Tofu Scrambles

Breakfast can be one of the hardest meals to make plant-based. Sure, you can enjoy plenty of smoothies and toast, but what about the egg dishes that are so popular in American cuisine? Is there a way to convert them to a plant-based option? There actually is, and it's called a tofu scramble. Really, you can add whatever you want to tofu, fry it up, and enjoy it as a tofu scramble. But if you're new to the idea, you may want to start by following one of these more specific plant-based tofu scramble recipes that places like Herbivore's Kitchen have created.

Spicy Chipotle Tofu Scramble

If you like your breakfast a bit spicy, this scramble is the perfect choice for you. It's also loaded with plenty of fiber-rich veggies, so it should keep you full all morning. To make enough for 1 generous serving, you'll need:

  • 6 ounces firm tofu
  • 1 teaspoon nutritional yeast
  • a pinch of salt
  • 1/4 teaspoon dried chipotle pepper
  • a pinch of turmeric
  • 1 tablespoon oat milk
  • 2 large mushrooms, minced
  • 2 tablespoons minced onion
  • 1/4 cup red bell pepper, chopped
  • 1 cup fresh spinach
  • 2 teaspoons canola oil

Place the tofu in a bowl. Add the salt, chipotle, and turmeric, and mash well. Heat the canola oil in a skillet, and then add the onion, pepper, and mushrooms to the pan. When the veggies are tender, add the tofu to the pan, and cook until it starts to brown. Pour the oat milk into the pan, add the spinach, and continue to sauté until the spinach has wilted. Plate, and enjoy!

Almost Cheesy Tofu Scramble

This one is so creamy and delicious you'll never realize it was made with plant-based cheese, not dairy cheese. You can substitute any style of cheese you prefer for the American-style that the recipe calls for. To make one large serving, you'll need:

  • 6 ounces firm tofu
  • a pinch of salt
  • a pinch of black pepper
  • a pinch of turmeric
  • 2 tablespoons minced red onion
  • 2 tablespoons minced red pepper
  • 1 ounce American-style, plant-based cheese, cut into small pieces
  • 1 tablespoon oat milk
  • 1 teaspoon canola oil

Combine the tofu, salt, pepper, and turmeric in a bowl, and mash well. Add the canola oil to a skillet, and heat over medium heat. When the oil is hot, add the peppers and onions to the pan. Sauté briefly. Add the tofu, and sauté until it starts to brown. Stir in the oat milk and cheese, and continue cooking just until the cheese melts. Plate, and enjoy!
